Crunchy Mango Salad

This mango salad is a favourite of Alisons. It’s yummy, light, high on plant protein and easy to toss together. We both like the mix of fresh, sweet, savory and crunchy. Enjoy with a zesty lime dressing or any other dressing of your choice.

For the salad

  • 1 ripe mango, cubed
  • 2 handfuls baby spinach or arugula
  • 1/2 red pepper, sliced
  • 1/4 cup red onion, sliced
  • 10 cherry tomatoes, halved
  • 1 cup cooked quinoa or lentils
  • 1/2 tin black beans
  • 2 tbsp pumpkin seeds roasted in olive oil
  • 2 tbsp fresh herbs like cilantro or mint

For the dressing

  • Juice of 1 lime
  • 1 tbsp olive oil or tahini
  • 1 tsp maple syrup
  • 1/2 tsp grated ginger (optional)
  • Pinch of sea salt + black pepper
